  • Soften gelatin in water for five minutes.
  • Add to hot stock and stir until dissolved.
  • Season to taste with salt and add parsley.
  • Chill.
  • When firm, cut in cubes or beat slightly with a fork.
  • Serve in cold martini glasses.
