Always good to have in the freezer!
- 1 cup shredded coconut
- 1 cup brown sugar
- 2 1⁄2 cups crispy rice cereal
- 1⁄2 cup chopped pecans
- 1⁄2 cup melted butter
- 1 quart vanilla ice cream, softened
- Mix all ingredients except ice cream.
- Put one half of the cereal mixture in the bottom of a 9' x 9' pan.
- Spread soft ice cream over cereal mixture in pan.
- Top with remaining cereal mixture.
