- 4.92 ml ground cinnamon
- 2.46 ml ginger
- 78.78 ml vegetable oil
- 118.29 ml orange juice
- 78.78 ml buttermilk
- 4.92 ml vanilla extract

- 2 eggs, beaten

directions
- Preheat oven to 350.
- Spray or grease 12 cup and 6 cup muffin tins.
- Mix together flour, sugar, orange zest, nutmeg, cinnamon, nuts and ginger in large bowl.
- In another large bowl mix oil,juice, buttermilk, vanilla, orange extract and eggs.
- Mix together the dry ingredients to the wet in three batches. Mix only until the dry ingredients are incorporated.
- Bake for 15 minutes or until brown.
