Jean's Cookies

These were originally dubbed "chicken cookies" by our church youth group. I have no idea why, but the name stuck. I didn't want to post them that way for obvious reasons. ;) Anyway, these are a big hit for road trips, and what kid-young or old-doesn't love cookies?!

• Prep Time: 20 mins
• Cook Time: 15 mins

Ingredients:

Serves: 30

Yield: 60.0 cookies

• 2 cups margarine
• 2 cups brown sugar
• 1 cup granulated sugar
• 1 cup powdered sugar
• 4 eggs
• 1 teaspoon salt
• 2 teaspoons baking soda dissolved in 1/4 c warm water
• 4 cups oatmeal
• 4 cups flour
• 4 cups Rice Krispies
• 1 cup chocolate chips

Directions:

1. Cream the margarine with the sugars.
2. Add the eggs and salt and mix until smooth.
3. Blend in the baking soda/water mixture.
4. Add oatmeal, flour, rice krispies, and chocolate chips.
5. Drop by spoonfuls on a lightly greased cookie sheet.
6. Bake 10-15 minutes in a 350 oven until lightly browned.

Very good. I halved the recipe and did add about 2 tsp. vanilla, but otherwise made as directed. I think the yield on your recipe may be off, depending on the size of your cookie scoop. I used a 1 1/2 T. scoop and had 43 good sized cookies (and probably ate 2 cookies worth of dough!) so I would guess a full batch to yield about 90 cookies. This was a fun project for my 3 year old son, 1 year old daughter, and I to make a good mess with this afternoon, thanks! Made for PAC Spring '11.
