    My late friend Jean gave me this simple and delicious coffeecake recipe. It is easy and perfect for breakfast, a mid-morning coffee klatch or a snack any time of the day. You should be able to mix and bake it in 30 minutes.

    Directions:

      For topping combine the butter, sugar and cinnamon, set aside.
    2. 2
      Cream the sugar and butter, add egg and mix.
    3. 3
      Add the sifted dry ingredients, alternately with milk. Pour into a buttered and floured 9x9" cake pan.

      Bake 375 degrees, 20 minutes.

      Sprinkle with the topping, bake 20 minutes longer.

      Cool slightly before cutting into squares.

      This coffeecake had a nice, buttery, cinnamony flavor but it took longer than 24 minutes to bake. It seemed like the middle would never get done even though the sides were cooked, but after about 40 minutes it was ok (but it was very soft in texture). My oven runs hot, so I was surprised it took so long. Good taste and I will try this again because it was an easy recipe. I would add a little more flour (about 1/8-1/4 cup). I made this for Spring PAC 2010. Thanks!
