how do I know this is really a Japanese Pie? Sure don't but I know it is simple easy and good.
- 1 cup sugar
- 6 tablespoons margarine
- 2 eggs, beaten
- 1 tablespoon vinegar
- 1⁄2 cup raisins
- 1⁄2 cup pecans, chipped
- 1⁄2 cup coconut
- 1 (9 inch) pie crusts
- Melt margarine in a suacepan.
- Add sugar, eggs, and vinegar, beat well.
- Add remaining ingredients, beat together.
- Pour into an unbaked pie shell and bake at 350 degrees for 30 to 40 minutes.
I made this recipe for PAC Fall 2006. It went over really well with my family. The flavor was really great! I did however have to cook it for nearly 60 minutes to get it to set, but this could be my oven and not the recipe. It makes a very good and easy dessert.
