- 1 English cucumber, peeled, and thinly sliced
- 3 green onions, thinly sliced
- 1 tablespoon rice vinegar
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1⁄4 teaspoon sugar substitute
directions
- Combine all ingredients in a large bowl, toss until combined.

I thought this was very good, but I did have to alter it a bit. Initially, the soy sauce ( I even used low soadium) made this too salty. I added extra rice vinegar and extra (natural) sugar and some minced garlic. After a few hours of chilling, it was better. I think maybe it's too little cucumbers for the marinade as listed. Good, though. Thanx for posting!
