Jansson's Temptation (Sweden)

  • 1 lb potato
  • 2 large onions, finely chopped
  • 13 cup butter
  • 2 (2 ounce) cans anchovies, drained
  • salt and black pepper, to taste
  • 1 cup double cream (or milk)
  • parsley (optional garnish)
  • dill (optional garnish)

  • Preheat oven to 400°F ( 200°C/Gas mark 6).
  • Peel the potatoes and cut them into thin strips about 4cm (2in.) long. Put them in a bowl of cold water.
  • Fry the onions in 1oz. (30g) of the butter just until they're soft.
  • Drain the potatoes in a colander. Put a layer, approximately 1/3 of potatoes into a small, heatproof dish.
  • Cover the potatoes with a layer of anchovies. Then, cover the anchovies with a layer of the softened onions.
  • Repeat the layers of potato, anchovies and onion to the top of the dish, finishing with a layer of potato.
  • Sprinkle on salt and pepper.
  • Carefully pour the cream (or milk) all over the top and let it sink to the bottom of the dish.
  • Cut the rest of the butter into small pieces and dot them over the top of the potatoes.
  • Bake for about 45 minutes.
  • Garnish with parsley or dill, if desired.

Hi! I am happily married with two children, 26 and 12. For nearly 10 years when this site was Recipezaar and then Food.com I hosted several different forums. I enjoyed making, creating, reviewing, and photographing recipes, but what I miss the most are the friendships I made here. I was Food Editor for the Mill Creek View Newspaper in Mill Creek, WA. for about 4 years during that time. Currently I am the office manager at a small mental health clinic.
