Jan's Carrot Cake

"This recipe was given to me by a co-worker. She said it is her mother's recipe and as far as she has ever tasted it is the best. I did a throrough search of Recipezaar and saw no other recipe exactly like it. Even though there are so many I figured when it comes to cakes it is the subtle differences that matter, so please give this one a try!"

ingredients

• 2 cups flour
• 2 teaspoons baking powder
• 1 1⁄2 teaspoons baking soda
• 1 teaspoon salt
• 2 teaspoons cinnamon
• 2 cups sugar
• 1 dash ginger
• 1 1⁄2 cups vegetable oil
• 4 eggs
• 2 cups grated raw carrots
• 1 (8 3/4 ounce) can crushed pineapple, drained
• 1⁄2 cup chopped nuts
• optional 1/2 cup raisins

• Frosting

• 1 (8 ounce) package cream cheese, softened
• 1 lb powdered sugar
• 1⁄2 cup butter, softened
• 1 teaspoon vanilla

directions

1. Preheat oven to 350.
2. Sift all dry ingredients together.
3. Stir in oil.
4. Add eggs one at a time and beat well after each addition.
5. Add carrots, nuts, and pineapple last.
6. Pour into 9x13 pan and bake for 35-40 minutes.

8. Beat all ingredients together and frost when cake is cool.
