  1. wash and soak beans for 2 hours with heat (or soak over night).
  2. simmer uncovered 1 hour.
  3. add ham, potatoes, onions, carrots, celery.
  4. bring to a boil and simmer 1 hour.
  5. add remaining ingredients.
  6. bring to a boil and simmer 1 hour until thick.
