    Jamaican Jerk Chicken With Pineapple Salsa

    Directions:

      Pre-heat the oven to 425°F
    2. 2
      Score the flesh of the chicken and place in a shallow dish.
    3. 3
      Mix together the remaining ingredients and pour over the chicken.

      Cover and refrigerate. Leave to marinade for at least 30 minutes.

      Meanwhile, prepare the salsa by simply mixing all the ingredients together in a bowl.

      Place the chicken on a baking tray and cook in the oven for 25-30 minutes, until cooked through.

      Serve the chicken with the salsa and rice.

      This is a winner! I've made it twice now with great results. This is a great recipe for entertaining. It can also be frozen. I simply prepare the salsa and put in a ziploc bag and I mix the chicken breasts with the marinade and put them in a ziploc and freeze it all. When I'm ready to prepare it, I thaw the salsa and chicken. I also prefer to grill the chicken. I've never baked it. I think that grilling it really brings out the flavors.
