I just finished making these...tripled the recipe so i got 30. my DH LOVED them, eating 2 in the process of me writing this. so glad they came out good. next time i will add cheese and make half a batch spicier.
These were very good and easy to make, the dough is very forgiving and didn't break. The pastry gets yellow as it cooks. I left the filling in the refrigerator overnight, then made them the next morning. This is the sort of thing that you should make a big batch of and freeze for those "What do I feel like?" moments. Super pattie recipe, easy to prepare and delicious!
I don't really care for jamaican patties but DH loves them, so I tried these out for him. He says they're the best he's ever eaten! I'm terrible with pastry so they look ridiculous when I'm done, but thankfully they don't last long enough for anyone to notice. I make snack size patties, bake and flash freeze them, then just heat in the microwave and wrap in tin foil so he can take them to work with him.
Baking these for dinner along with some mango chutney and a grilled vegie salad.
I know these will be fantastic just from the ingredients. Other recipes add scotch bonnet peppers, which can be too hot for some, but could be added to this recipe. Mmm...Just like in da' islands mon'!!
Okay, I did cheat a little. I didn't have time to make the crust (but I will next time) so I used prepared pie crust dough that I dusted with curry powder. The filling is wonderful, though, and the pies were even delicious cold. They made a wonderful brown bag lunch! Made for ZWT5 by a Groovy GastroGnome.
