So easy to make. I did not have my mini muffin pan but did have my Gem Scones Cast Iron tray which I used and it cut the cooking time down to 12 minutes.<br/>I also experimented with frozen berries in some and nutella in others.......very yum yum

  1. Heat oven to 400°.
  2. Sift together flour and baking powder; stir in sugar and coconut.
  3. Beat the egg, vanilla extract, milk and oil together.
  4. Add the dry mix to the wet mixture.
  5. Mix just until combined.
  6. Drop a large tablespoon of batter into each tin.
  7. Add a teaspoon of jam to each and the rest of the batter.
  8. Sprinkle the tops with a little bit of coconut.
  9. Bake 25-30 minutes or until well risen and firm to the touch.
