A creamy spread, dip or dressing for veggies, breads, or whatever you can think of. A spicy alternative to mayonnaise.
- 1 (12 1/3 ounce) package lite firm tofu
- 1⁄3 cup sliced jalapeno (in jar or can)
- 1⁄2 cup apple cider vinegar
- minced garlic
- onion flakes
- white pepper
- Combine all ingredients in a blender and puree together until you get a smooth consistency.
This is a yummy dressing, I added anchovy paste to create a depth of flavor, but I am not sure that everyone would like this. I also doubled the jalapenos because I love love spicy. I think it is a good dip for veggies to have on hand for those snack cravings, especially for the carbohydrate counters out there! (I also like that it is Paleo friendly)
