Jack's Chocolate Chip Cookies

I don't know who Jack is, but he sure knows how to make a yummy cookie. This is a recipe I adapted off of allrecipies.com. I've reduced the amount of sugar and made low fat options to this recipe. Yummo.

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream the butter, applesauce, brown sugar and white sugar until smooth. Add the egg sub. and mix. Stir in the milk and vanilla. Sift together the flour, baking powder, baking soda and salt, stir into the creamed mixture. Using a wooden spoon, stir in the rolled oats, chocolate chips and walnuts.
  3. Roll the dough into walnut sized balls, and place 2 inches apart on an unprepared cookie sheet. Bake for 10 to 12 minutes in the preheated oven. Cool cookies on wire racks.

This is a good cookie. I was hesitant with all the scary healthy stuff in here, but they don't taste icky and healthy ;) I did not use the nuts, and I think I should have because they were missing that 'something' extra. These are very nice oatmeal chocolate chip cookies. I used regular rolled oats instead of instant oats since there was no distinction and these are a littel thicker and crunchier than I think I thought they would be. My family loves them though, which is always good with a cookie made with a lot of applesauce! I got 60 cookies out of this batch and they've been a nice lunchbox addition. And a bonus, for me, is that batter made with applesauce never tastes that great as batter which means I'm not tempted to eat large amounts of it before it gets baked. I don't know who Jack is either, but this is definately a keeper! I did have to make a few changes. I only had milk chocolate chips....and only had half of those; so I used half white chocolate chips. Because of my little one, I done half of the batch with pecans and half without. I liked them both. Can't really choose which way I really liked the best. Thanks for posting this yummy cookie recipe. Reviewed for Fall 07 photo tag.
