Italian Wedding Soup

"This is my version of a classic, very easy and even a spinach hater will love this."

• Ingredients: 8
• Serves: 6-8

ingredients

• 1 (10 ounce) package frozen chopped spinach
• 1 lb ground beef
• 1 medium onion, diced
• about 1 cup acini di pepe pasta
• 4 cups chicken stock
• 1 tablespoon garlic
• salt
• pepper

directions

1. Thaw spinach and drain excess liquid.
2. Brown ground beef and onion.
3. Add chicken stock and bring to a boil.
4. Add noodles and seasoning.
5. Add spinach.
6. When serving top with a sprinke of mozzarella cheese.
