This is my version of a classic, very easy and even a spinach hater will love this.
- 1 (10 ounce) package frozen chopped spinach
- 1 lb ground beef
- 1 medium onion, diced
- about 1 cup acini di pepe pasta
- 4 cups chicken stock
- 1 tablespoon garlic
- Thaw spinach and drain excess liquid.
- Brown ground beef and onion.
- Add chicken stock and bring to a boil.
- Add noodles and seasoning.
- Add spinach.
- When serving top with a sprinke of mozzarella cheese.
