Italian Vegetable Casserole

  • Preheat oven to 350 degrees F. Saute zucchini, yellow squash and onion with the butter and garlic.
  • Add oregano and tomato sauce.
  • Simmer for 5 - 7 minutes.
  • Place in a casserole dish and sprinkle with cheese.
  • Bake for 30 minutes.

  1. I thought this was good very similar to Ratatouille which I make but I do not bake mine with cheese which I liked. I think next time I may play around with seasoning I don't think I added enough garlic. Thanks for a great recipe. I made this for PAC 2011.

My little house is overflowing with cookbooks, thank goodness I found Recipezaar! I can collect all the recipes I want! I live in Fort Worth, Texas close to my two grown kids and four grandchildren. We love to visit Costa Rica. This is a picture of my whole family over spring break.I'm the big momma in the back. We went to Costa Rica and had such a great trip. We are now importing Costa Rica coffee. <br />I enjoy baking with my granddaughters. We like to make cookies and cupcakes.
