  • In a large sauce pan, brown veal cubes in olive oil over medium high heat.
  • Reduce heat to medium and add parsley, rosemary, garlic, salt, and pepper.
  • Saute until garlic is tender but not brown, about 5 minutes.
  • Add tomatoes.
  • Simmer for about 15 minutes.
  • Add potatoes and simmer for about 30 minutes or until potatoes are tender.

I am a software engineer by trade, but I love to cook and eat. Probably why I am also a lifetime member of Weight Watchers. My ancestors are all from Italy, so I favor Italian food, but I have yet to meet a cuisine I didn't like. Most of my extended family currently lives in NJ, but I live in Texas. I am happily married to a dynamics engineer and we have two teenage kids. I am very busy and don't get to cook nearly as much as I'd like. My son has inherited my love for cooking and talks about going to cooking school. (Yippee!) I sometimes take cooking classes at the local gourmet grocery store. My biggest pet peeve is garlic powder. I gag when someone mentions it.
