Directions

  1. Add oil to skillet and turn heat to medium.
  2. In a bowl, combine turkey, salt, pepper, garlic powder, fennel/caraway/celery seeds, crushed red pepper, and poultry seasoning.
  3. Mix with fingertips until well incorporated.
  4. Add turkey mixture to skillet and cook until well done and aromatic.
  5. Drain sausage and set aside.
  6. Use as desired.

I just realized that I hadn't rated this!! This is wonderful! I love having the control over the fattiness of the turkey as well as the spicyness. My only changes are no poultry seasoning, which I don't miss at all, and I usually don't need canola oil since the turkey I generally use is 93% fat free. This has become a family staple. I do up about 3 lbs. at a time and then freeze it to have on hand for pizza or to throw into sauces or soups/stews. Fabulous!!

yay finally a turkey sausage recipe that is good! I halved the salt and Ill probably leave it out next time. I didnt have poultry seasoning so I left it out. I also added a bit of sage. Will make again!

Thanks so much for sharing this. My husband enjoyed it! I cut the poultry seasoning amount a lot, too--used about a quarter of the amount. I also cut the salt amount in half. I didn't have caraway seed, but found out you could use a little cumin instead, and I had no celery seed! I also left out the oil. The fennel seeds & crushed red pepper made a huge difference. Used lean ground turkey & plan on using this in calzones & soups. Thanks again for sharing!!!
