  • In a medium bowl, combine the tuna, cheese, eggs, olives and red peppers.
  • Add dressing; toss lightly to coat.
  • Divide romaine among 2 serving plates.
  • Spoon tuna mixture over romaine; top with garlic croutons if desired.

  1. This was a very easy to prepare recipe. It was very refreshing and a welsome change to my old lunch routine. My hubby who dislikes tuna even tried this and loves it. I will never make tuna salad any other way again. I cut out the crutons to make it a low carb meal, and it was delicious.
     
  2. Delicious!!! made exact using the lite caesar dressing suggested. Drizzled a little extra dressing on romaine before topping with the tuna mixture. thank you for a great light and tasty meal!
