  1. put the tomatoes with their can juice if using canned tomatoes into a pan and add sugar, garlic and a pinch of salt. Cover add cook over low heat for about 30mins without stirring. Mash the tomatoes. If using canned tomatoes cook for a further 15 mins remove the pan from heat and let cool. Stir in the olive oil and basil.
