Growing up in New Jersey, this salad is in every deli case, I was surprised not to find it here. It is a taste of summer, a great way to use up garden bounty and comes together in a few minutes, tho its nice to let the flavors marry for a bit. The secret is to have the veggies cut to all the same size and make sure you use a sweet onion.
- Chop veggies to be about the same size, mix in the dressing ingredients, stir. Let rest in the fridge till supper time and serve.
