Italian Style Mixed Salad

"This is an old woman's weekly recipe, I make it a lot during the summer months. It is a bit like a roasted vegetable salad. I use bottled Italian dressing, but you can make your own and use it if you prefer."

  • Trim and string beans, cut into 5cm (2in) lengths. Wash mushrooms, and slice: quarter onions: remove stalk from pepper, cut into strips: peel carrots, cut diagonally into 2.5cm (1 in) chunks: divide cauliflower into florets: cut unpeeled eggplant into 2.5
  • (1 in) cube: cut celery diagonally into 2.5 (1in) slices.
  • Saute vegetables in hot oil for about 5 minutes and put into a large salad bowl.
  • Add dressing and toss lightly.
  • TO MAKE DRESSING:

  • Combine all ingredients in a screw top jar, shake to combine well.
