Italian Style Chicken Rolls

These look like you spent a lot of time, but are quick and easy and taste divine. Serve with a salad or fresh veggies for a simple, yet elegant dinner.

I love this recipe from Easy Everyday cooking. I sometimes use provolone in place of the swiss but any other chese would work well in this. Thanks for posting.

  1. Preheat oven to 350 degrees.
  2. Pound each chicken breast to 1/4 inch thickness.
  3. Salt & Pepper each piece of chicken to your taste.
  4. Layer 1 slice of cheese and 1 slice of prosciutto or lean ham onto each chicken breast.
  5. Roll to enclose the filling.
  6. Secure with toothpicks or kitchen twine.
  7. Mix paprika, bread crumbs, Parmesan & garlic powder, in a shallow dish.
  8. Dip chicken rolls into melted butter or margarine or sometimes I use olive oil, whichever you like best.
  9. Roll in crumb coating mixture to coat chicken rolls.
  10. Place rolls seam sides down in a baking dish.
  11. Bake for 25 minutes or until chicken is cooked through and golden brown.
