Italian Sausage Pasta

- 400 g Italian sausage (I used Sainsbury taste the difference Sicilian sausages)
- low-fat cooking spray
- 150 g mushrooms
- 2 red onions, chopped
- 1 red pepper, thinly sliced
- 1 (400 g) plum tomatoes (tinned)
- 1 tablespoon tomato paste
- 300 ml water
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon balsamic vinegar
- black pepper
- 300 g pasta
directions
- On a George foreman grill cook the sausage for approximately 15 minutes until cooked through.
- Heat the cooking spray in a frying pan and fry the onions for approximately 5 minutes, add the mushrooms, peppers, balsamic and herbs and cook for a further 5 minutes. Add the tomatoes, tomato paste and water. Bring to boil and simmer gently for 45 minutes.
- Cook pasta according to packet instructions.
- Add sausages to sauce and heat through, serve over pasta.
