I first tasted this delightfull homestyle casserole at a potluck supper 20 years ago. I hunted down the cook, but she made this without a recipe. Here is my version, in recipe form.
- 1 1⁄2 lbs Italian sausage, cut into 1 1/2 inch pieces
- 1 large onion, sliced
- 3 carrots, sliced
- 3 baking potatoes, peeled and cut into chunks
- 1 (28 ounce) can diced tomatoes
- salt and pepper
