- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 teaspoons fennel seeds
- 4 teaspoons oregano
- 1 teaspoon garlic powder
- 8 lbs pork shoulder
- Cut the pork into 1 1/2" cubes.
- Sprinkle combined seasoning on pork and toss to distribute.
- Shape sausage into patties.
You can't buy italian sausage here in England and yet I love it! So this is my go-to recipe. This always gives a great taste and is easy to adapt to many dishes. Thanks for posting!
This was a wonderful sausage. I used ground pork about 1-1/2 pounds. It tasted just like something you would get out of the store!
Thanks! I am pregnant and staying away from nitrates. You can't buy sausage in the store without nitrates- so this is a great recipe. Easy too!
