This is for anyone who loves the sweet zesty Italian dressings.
- 1 cup olive oil
- 5 tablespoons red wine vinegar
- 2 tablespoons sugar
- 1 garlic clove, pureed
- 2 tablespoons chopped parsley
- 4 tablespoons sour cream
- coarse black pepper
- 1⁄4 teaspoon dry mustard
- Mix all the ingredients well and store in the fridge in a jar for 4 weeks.
1 c. of olive oil is way too much, in my opinion. I tasted the flavors before I added the olive oil and it was great. I added 3/4 c. and all I could taste was the oil, so I had to go back & add more garlic, vinegar, etc. Next time I'll start with 1/3 c. olive oil and see if more is needed.
Otherwise, the color is a bit of a funky pink, but the flavors are great. A good creamy Italian dressing, if you watch the oil!
