A south Jersey staple. Serve as a sandwich on a hard, crusted roll or as a side dish.
- 2-3 white potatoes, chopped in small pieces
- 2 green peppers, chopped in pieces
- 1 onion, diced
- 2 eggs, beaten
- salt and pepper
- 0.59 ml sugar
- canola oil
- In a large frying pan, cook white potatoes and green peppers in oil until tender adding salt, pepper and sugar.
- When vegetables are tender, add the 2 beaten eggs and stir until egg is cooked. Serve with hot sauce on the side if desired.
This is such an easy and super yummy recipe! I made it for dinner tonight and everyone just luved it. It has a really nice texture and the taste its scrumptious. I especially like the idea of adding in peppers. They make the whole thing special. I used mixed bell peppers since thats what I had on hand, added in some dill and left out the sugar and hot sauce. But other than that I followed the recipe exactly and it was just right. Thanks so much for sharing this keeper of a recipe with us, Irish Rose. Loved it, but needs 6 eggs instead of 4.
Very tasty breakfast!! I skipped the hot sauce because it's just too early-LOL! This came together very quick which is a plus. I loved the potato,onion,green pepper combo. Thanks so much for posting! Made for My 3 Chefs '08.
