This is such an easy and super yummy recipe! I made it for dinner tonight and everyone just luved it. It has a really nice texture and the taste its scrumptious. I especially like the idea of adding in peppers. They make the whole thing special. I used mixed bell peppers since thats what I had on hand, added in some dill and left out the sugar and hot sauce. But other than that I followed the recipe exactly and it was just right. Thanks so much for sharing this keeper of a recipe with us, Irish Rose. Very tasty breakfast!! I skipped the hot sauce because it's just too early-LOL! This came together very quick which is a plus. I loved the potato,onion,green pepper combo. Thanks so much for posting! Made for My 3 Chefs '08.
