I'm not sure this is really an Italian Omelet, but that is what my mom always called it. Very simple and tasty.
- Mix all ingredients together and beat well.
- Heat skillet and spray with cooking spray.
- Pour egg mixture into pan and cook until almost set; fold omelet in half and cook about 30 seconds longer.
An easy to make omelet with just a little extra to give it a light flavor. I used water instead of the milk. Made for *1 2 3 Hits March 2010*
Yes finally - after all the procrastination, I finally sat down and made this. I used mozzarella instead of parmesan, and didn't add parsley (I really don't like them!), so I used fresh rosemary instead. I think this recipe could be better if it was seasoned! You know.. salt and pepper. But ultimately it is still a very good base to play about with. How about adding some mushrooms? Or some onions? Thanks for this recipe!
