Italian Meatloaf

"Yummy, easy twist on meatloaf, this recipe was given to me by a former coworker. The recipe calls for cracker crumbs, I've used saltines & Ritz, either works."

  • Mix all ingredients EXCEPT cheese and 2/3 cup tomato sauce.
  • Spread meat mixture into rectangle and sprinkle with cheese.
  • Roll up mixture and press ends together.
  • Place in shallow pan, bake 1 hour at 350.
  • After an hour, pour the remaining 2/3 cup tomato sauce over the top of loaf & bake 15 minutes longer.

I've loved collecting recipes & cookbooks for many years. My favorite cookbooks are the ones church members have put together. I prefer quick & easy recipes. As a preteen I loved to bake. I grew up with comfort foods, meat & potato kind of dinners, using the crock pot. Living in AZ I've gotten used to eating alot more salsa & pico de gallo. My daughters, ages 9 & 8, are now learning to cook & loving it. My youngest loves to make (simple) meals for me & she always garnishes with fruit. She's got the right idea to make the plate appealing. When we get the chance we love to watch Top Chef & Rachel Ray. This summer they are both enrolled in a cooking class. This year is my first attempt at gardening. I've planted both a vegetable & flower garden. So far so good. Hopefully everything will survive our AZ summer!
