This is an awesome recipe. I made it yesterday and it just keeps getting better. I used Morningstar Farms veggie meatballs and it turned out perfect. The parmesan cheese makes it extra special. This is a definite keeper.
I really loved this soup. It is easy to make and very flavorful. I will definitely make again. I added a can of beans to increase the fiber and make it a really complete meal. I just realized I forgot to sprinkle the parmesan. Can't wait to try it with the cheese.
This is an awesome recipe that I will be keeping. Especially on those nights that you have no interest in cooking. It was easy and delicious. Served with crackers and toasty french bread for dipping! I used the Kittencal meatball recipe for the meatballs!! It was heaven in a bowl!! The ate it up and asked for seconds. Definitely a keeper! Thanks Derf!
Funny how the simplest recipes are often the tastiest! This is so easy and has been a hit with everyone every time. I cook everything but the pasta about 20 minutes or so to soften the veggies before I throw the noodles in, then cook 10 more. I also add in more beef broth for more soup. Amazing with a loaf of hot french bread!
This is a great soup and super easy. I had to vary a little because I forgot to buy the meatballs and was too lazy to make some! I fried up some hamburg and used that. Next time I will take your hint Derf, and add some pepper flakes...thanks for the recipe!
This is like a minestrone with meatballs!! It really was easy & fast to put together. I used my own meatballs, but used around 10 of them. I used low sodium chicken broth & added 1/4 tsp oregano. I think next time I'll add some salt & pepper just for extra flavor. I used whole wheat elbows & simmer time was about 8 minutes. I also sauteed some chopped onion & garlic before adding everything else. I might add a can of white beans next time to add more fiber!
This is so delicious! i used Orzo as I had it to hand, but am sure any shape pasta would work just as well. Full of flavour and easy to make. This will be making it onto our dinner rotation!
Soo good and very quick if you are short on time! I doubled the recipie and used a large can of vegetables instead of the frozen. Will definitely make this again!
This was a hit for us. It came together quickly and a double batch was enough for 4 adults and 2 kids to have seconds and a bowl of leftovers for one of the adults. We enjoyed it with a roll of french bread. Will definitely make it again! Thanks for sharing.
I made this soup for mine and SO's Dinner on 3/10/11.I made my own broth by using two bouillon cubes and 14 ounces of water, also used more Italian seasoning than the recipe called for. Since I didn't have the pasta called for, elbow macaroni was used.Since there were some leftover veggies that needed to be used,those were added.This was a very nice " Tummy Warming " recipe for a chilly night.
