Italian Marinated Grape Tomatoes and Asparagus

  1. In a large 12" skillet, bring water to boil.
  2. Add a little salt if desired.
  3. Cook asparagus for 2-3 minutes then drain and plunge into ice water to stop the cooking process.
  4. Cut asparagus into 1" pieces.
  5. In a large bowl, mix all ingredients together and stir gently.
  6. Refrigerate until ready to serve.
  7. Can be made 1 day ahead.
