Italian Kale With Turkey Sausage and Penne

"This hearty dish is an amazing way to get picky eaters to eat greens. The bitterness of the kale and the sweetness of the tomato work especially well together. I use a whole wheat pasta to make it a heart healthy dish."

  • 4 tablespoons olive oil
  • 1 medium onion, chopped into 1/2 inch dice
  • 1 lb Italian turkey sausage (lean)
  • 1 (12 -16 ounce) can tomato sauce
  • 2 bunches kale, chopped into 1/2 inch ribbons
  • 1 lb whole wheat penne

directions

  • Bring 6 quarts water to a boil and add 2 tablespoons salt.
  • In a large saute pan, heat oil and onion over medium heat until just softened, about five to seven minutes.
  • Remove the casing from the turkey sausage and crumble into pan. Cook for 5-8 minutes or until mostly cooked.
  • Add tomato sauce and kale.
  • Cover pan and simmer for 15 minutes.
  • Meanwhile, cook pasta according to package instructions until just "al dente" and drain.
  • Remove lid from pan and add hot pasta. Toss to mix well and serve immediately.

  2. Followed the recipe exactly except I snuck in 1/2c pureed summer squash and 1/2c pureed broccoli. Nobody noticed and they got some extra vegetables in a delicious way.
     
  3. I just wanted to comment because I made so many changes to your recipe that I feel like I can't really give you stars, but I loved the dish all the same. I used turkey bacon in place of sausage, a combination of fire-roasted diced tomatoes and homemade tomato sauce, 4 garlic cloves and some hot cherry peppers in addition to the onion, and 1 bunch of kale, along with bow tie pasta. I added some of the cooking liquid from the pasta to loosen the sauce a bit. I thought it was a great, simple dish, and everybody just loved it. Next time I make it, I will make sure I have sausage on hand so I can try it the way the recipe truly states. Thanks!
     
  4. I agree, the finished product is awesome. I was a bit unsure about the "2 bunches of kale." How big is a bunch? My saute pan was overflowing. But it cooked down to a manageable size and went perfectly with the huge amount of pasta. I used three 8 oz. cans of tomato sauce. I also used hot turkey sausage. Very nice recipe. Thanks!
     
  5. PhPh, this is a great recipe. We joined a CSA and now have to find ways to eat kale, broccoli raab and the like. This is a keeper - will definitely make again! We used bow-ties and hot sausage and it was awesome. Thanks for sharing!
