  • Split each shrimp on underside down to tail, try to avoid cutting meat (use sharp knife or scissors).
  • Put shrimp in bowl with remaining ingredients.
  • Stir well to coat.
  • Cover and refrigerate at least 2 hours.
  • Push onto skewers and grill shrimp 6 inches from heat over a low charcoal fire.
  • Turn frequently.
  • takes about 15 minutes.
  • Serve skewered shrimp scampi with garlic butter.

  1. Found that the 2 hour marinade was too long - it started to cook the shrimp. I only let it go 1 hour. Best grilled shrimp recipe so far.
     
  2. I BBQ shrimp often using a very similar recipe. The only difference is that I add whole garlic cloves on the skewers between the prawns. I love garlic!
     
  3. I like the use of lime juice instead of lemon, it gives it a great flavor that's a nice change from the usual lemon juice, plus I had some leftover from making Mojitos. A great multicultural cocktail hour combo. Thank you.
     
  4. Just had this for supper along with a small bit of BBQ steak. WONDERFUL. I marinated it from partly frozen for about 45 minutes and was afraid the lime juice might cook it too much but it was perfect. Highly recommend this recipe because I think it was my best meal of the year so far. We had it with new potatoes, onions, and carrots from the garden, cooked in foil on the BBQ. I used the largest raw frozen shrimp available and I think that made a difference. BTW the shrimp were already cut and deveined down the back. I took the shells off but left the tail shell for easy handling. So now we are sitting here with garlic butter on our chins and smiling.
     
  5. This was wonderful! I used the same recipe for my mahi-mahi and it turned out great. I put the fish and shrimp in foil pouches and cooked in the oven. My husband loved the shrimp and the fish. I will cook again! Thanks Bev!
