Crisp, fresh, tangy. Easy to make. Certainly a salad I will make again. Used fresh basil, a couple of leaves, which I shredded just before serving. A lot of salt is for us about 1/4 tsp. The juice of one lemon yealded about 3 tbs. I am writing this in order for me to remember the amount for the next time. Thanks for posting. Made for PAC Spring '08.

  1. Seed the cucumber. Chop the cucumber and tomatoes into uniform pieces. Add oil, lemon juice, crushed garlic (start out with very little and add to taste), salt, and a little basil to enhance the flavor; not to cover it up. Enjoy!
