Pretty good. I didn't have the wine and used 1/2 of the thyme. Also I used chicken tenderloins which made the cooking faster. Great with garlic bread. Great for a cold rainy day.
This smells sooo good when it is cooking. I also added shallots and garlic. I used one 28oz can of fire roasted tomatoes that I hand crushed and one quart of chicken stock so I would have more liquid. Omitted the wine since I had none on hand. Added one can of artichoke hearts (quartered) with the beans and one box of cut spinach just before adding the chicken back to the pot. Served over savory polenta. Will definitely make for company. Thanks!
I made this after complaints from my kids about chicken soup not being filling. They loved it! I varied a little by using a whole chicken cut up instead of just breasts. I also doubled the rest of the ingredients to make up for the increase in meat, except for the wine. I kept that to 1/4 cup because my kids aren't crazy about wine flavoring. I used kidney beans instead of the cannelini since I had them on hand. They are already asking me when I'm going to make it again.
This was easy to make and I think I will make it again, but a little differently. The changes that I made was that I didn't add the wine because I don't normally cook with wine and it seemed like a waste to buy a whole bottle for 1/4 cup. I also used navy beans since I couldn't find cannellini beans and three boneless skinless chicken breasts. I also can't find fire roasted tomatoes where I live. This would have been great with crusty rolls or garlic bread but I didn't have either. Next time I will use less thyme as I found it really overwhelming. But I did enjoy it and will make it again and the great part is that it's so versatile and can be made with any number of veggies on hand. Thanks for posting!
This recipe was fast, easy, and very full of flavor. I added some Italian sausage, pancetta, and canned portabello mushrooms. Great on its own, or leftovers over pasta.
delicious, easy. very simple to put together and the taste was outstanding. first time ever making a stew but the ingredients appealed to me; glad i tried it. the flavors all go together very smoothly. will make this again for sure but may add a bit more wine *just my preference. thank you for sharing.
