Light and refreshing. I added some chopped dill and it made it even nicer.

  1. Place the chopped vegetables in a serving bowl. Gently toss to combine.
  2. In a small bowl, combine the lemon juice, olive oil, salt, and pepper (to taste).
  3. Drizzle over the vegetables and toss to combine.
  4. Serve immediately or cover and refrigerate for up to 2 days.
