The first time I had this simple salad was in the Negev camping out. It is simple, delicious and even my kids like it.

Really tasty! I used a bit of red wine vinegar as well as the lemon juice, and mixed the salad with some cooked Israeli cous cous to make it a pasta salad. Good flavors, and the longer it sits and chills, the better!
- 1 cucumber, peeled seeded and diced
- 2 fresh tomatoes, diced
- 2 green onions, chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄2 teaspoon dill weed
- 1⁄4 cup chopped parsley (optional)
