This is one that I my grandchildren like also....
- 1 lb ground chuck
- 1 cup chopped onion
- 1 cup sliced celery
- 1 cup sliced carrot
- 2 cups cubed potatoes
- 3⁄4 cup frozen peas
- 2 cups water
- 1⁄8 teaspoon pepper
- 1⁄4-1⁄2 teaspoon salt
- Brown ground chuck and onion in soup kettle until meat is no longer pink and is broken up good.
- Add the remaining ingredients.
- Bring to a boil; reduce heat and simmer about 45 minutes until vegetables are tender.
- Serve with crackers or Irish bread.
This is a great stew! The only problem I had with it was that it really didn't make 8 servings. I would say 6 was the absolute maximum. Our family of 4 ate it all up just like that! So it was very good! I also used stew meat instead of ground chuck. I liked the big quantities of celery and frozen peas, which gave a nice green touch for St. Patrick's Day.
