Irish Soda Bread

"This recipe was in a magazine article written by a local chef in March 2001. It was about recipes he had learned to cook while he spent a month in Ireland. This bread is wonderful and easy to make. Makes great toast too."

  • Preheat oven to 450 degrees.
  • Mix together all dry ingredients in a large bowl.
  • Add buttermilk and mix gently. Transfer dough to a floured surface, fold the dough together 4 to 5 times and then form a loaf about 8 or 9 inches in diameter.
  • Grease a 2 x 10-inch round cake pan and place the dough in the pan. Make a cross on the top with a knife.
  • Bake 15 minutes, then reduce heat to 400 degrees and bake another 20 to 25 minutes.
  • Remove from pan and cool before cutting.

I am now semi-retired and an Empty Nester. I try to focus on lighter dishes for day to day menus. I still like to explore new food ideas. I look for smaller quantity dishes now. I am not vegetarian but I cook with more vegetables than meat now. I enjoy sharing desserts with family and my co-workers.
