This is an easy recipe that the kids can help with!! Edit I entered the wrong amount of servings it was orignally 20.
- 1⁄2-1 cup butter
- 1⁄2 teaspoon vanilla
- 1 (1 lb) box powdered 10x sugar
- 4 ounces cream cheese
- 1⁄3 cup cinnamon
- 1⁄3 cup sugar
- Cream the butter and cream cheese.
- Add the vanilla.
- Add the 10x sugar a little at a time.
- Knead by hand.
- Form into small balls and roll into cinnamon, sugar.
Totally simple, even a kitchen moron (like myself) can do it. The only thing I think is off is the amount of "potatoes" it makes. I guess if you made them closer to the size of "real potatoes" then it would be about 20. I made them smaller, figuring they would be too sweet to be that large. With a doubled recipe I made like 100 little balls - which is a good amount because I am bringing them to an International Potluck Supper at my church. Don't know how authentic they are as Irsih, but they are yummy and that is all that matters to me! They taste like little cinnamon cheese cakes.
This made a really good cream cheese frosting. As for the potatoes, they were good but they were really sweet. I made like a dozen small bits, and that was way to much for me and Avi (who really didn't like them at all) Ended up using the rest as frosting. Which was really good.
Big hit in our house also except I too doubled the recipe expecting only 20 potatoes but my children's classmates didn't mind helping out with the extras!!
