Our guests enjoyed it as did my husband and I. It makes for great leftovers also. The lemon flavor really comes out the next day.

basil lemon and garlic don't belong in Irish cooking - not that my mum ganny or aunties ever made

This is wonderful! The only change I made was that I used chicken stock instead of the sherry. The meat was tender and juicy. Will make this again. Thanks for sharing.

Thank you so much for sharing your tasty tasty recipe Pixie. We enjoyed it so much, the flavour of the pork was incredible. I used pork tenderloins and less olive oil. I cooked the tenderloins for 1 hour. It turned out wonderful and smelled so good while cooking.
