- 5 1⁄2 cups all-purpose flour
- 1⁄2 cup sugar
- 1⁄2 ounce fast rising yeast (2 packages)
- 3⁄4 teaspoon salt
- 1 cup boiling water
- 1⁄2 cup butter
- 2 eggs, slightly beaten
- 1⁄3 cup mashed potatoes
- 1 cup chopped dates or 1 cup raisins
directions
- In large bowl, mix together 2 cups of flour, sugar, yeast and salt.
- Bring butter and water to nearly boiling. Pour slowly over dry ingredients and mix into a dough.
- Stir in eggs, mashed potatoes, and dried fruit. Add flour to make a soft dough.
- Knead on floured surface 1 minute. Cover and let rest 10 minutes.
- Cut ino 6 sections; shape into balls and place in 2 greased loaf pans (3 balls per pan); spray tops with butter or Pam; cover and let rise in a warm place for 60 minutes.
- Bake at 350 degrees for 35 minutes.
