  1. In a large soup pot over medium heat, render the meat until bacon is crisp.
  2. Remove meat and set aside.
  3. Sweat potatoes.
  4. Add onions and sweat for 30 seconds.
  5. Add garlic and sweat for 30 seconds.
  6. Deglaze pot with stock.
  7. Add pepper.
  8. Reduce heat to low and simmer until potatoes are tender, about 25 minutes.
  9. Just before serving, add remaining ingredients.
