Irish Brown Bread

This is the type of bread we had when we were in Dublin. It's wonderful with stews or just with a bit of butter.

  1. • Preheat oven to 375 degrees F.
  2. • mix together both flours, baking soda, baking powder, and salt.
  3. • melt butter in the microwave.
  4. • mix together milk, vinegar, butter, and egg until blended.
  5. • Pour the milk mixture in with the flour mixture.
  6. • Prepare baking paper by spraying it with cooking spray (or butter) and powder it with flour.
  7. • Take the dough out on a floured surface (using white flour) and knead until the dough can hold a rounded form.
  8. • Place the round dough loaf on the floured baking paper.
  9. • Dab the top with a bit of melted butter, cut an X into the top of the loaf (To let the fairies out, as the Irish say!) and place it onto a middle rack in the oven.
  10. • Bake for around 35-40 minutes until the loaf is hollow (you should be able to lightly knock on it and tell).
