A nice St. Patrick's Day stew for the crockpot!

What a wonderful stew for St. Patrick's Day! We thoroughly enjoyed it served with a warm slice of fresh beer bread. I did add 1 tsp. of thyme, 2 bay leaves, a sprinkle of hot pepper, and a can of cut green beans. Was done in 6 hours. My husband loved it and said, "How is this different from the stew you usually make?" My response, "It was a whole lot easier to make!" Bye bye old stew, Hello Irish Beew Stew! - 2 lbs stewing beef, cubed
- 1 envelope dry onion soup mix
- 2 (10 3/4 ounce) cans tomato soup
- 1 (10 3/4 ounce) can water
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 cups diced carrots
- 2 cups diced potatoes
