A simple yet delicious side dish. Makes potato flakes taste like the real thing! A family fave.
- 3 cups instant mashed potatoes
- 3 cups water
- 1 cup milk
- 6 tablespoons butter
- 1⁄4 cup minced onion
- 2 eggs
- 8 ounces cream cheese
- 1 teaspoon salt
- Mix all ingredients together.
- Bake at 350* for 25-30 minutes.
So easy and so good! This recipe can be adjusted so many ways to make it different. Crumble bacon, and shredded cheese, maybe cubed ham....endless possibilities!
Many thanks I needed someway to use up some of my oversupply of instant potatoes. These were great, my family loved them. Thought of trying them with a little ranch dressing also.
Subbed garlic for onion, and reduced to serve 2. Topped with a bit of paprika for color. Otherwise made precisely as described. It was good, but bland. Maybe a little more cheese, or top with cheddar, or even add crumbled bacon next time.
